The Best Yet Easy Classic Banana Bread Recipe

One of my family’s comfort food is a cold and moist slice of banana bread.

What’s good about this recipe is that, it requires very basic ingredients which are most likely available in your pantry.

Which bananas? Use fully ripe or overripe bananas with brown spots. Overripe bananas are more flavorful and more aromatic. Your home will smell heavenly!

There’s only one bad thing about banana bread, it cannot be store-bought. It is best homemade because the real deal should fill your entire home with its aroma before it fills your craving tummy.

 

So, let’s get cooking!

Here are the ingredients:

2 cups flour

½ cup brown sugar

½ cup oil

3  ripe bananas

1 egg

1 tsp vanilla

2.5 tsp baking powder

1 tsp cinnamon powder

2 tbsp of melted, unsalted butter

Oven temperature:  175 degrees Celcius

Baking time: 40-50 minutes

Here’s how to prepare and bake the Classic Banana Bread:

  1. Mash the bananas in a bowl using a fork or a whisk.
  2. Add the egg, sugar, vanilla, melted butter and oil.
  3. Mix well until completely combined.
  4. Combine the flour and the baking powder and sift into the banana mixture.
  5. Mix gently with a wooden spoon or a spatula until it starts to combine. Do not overmix.
  6. Rub a little oil or butter onto a nine-inch loaf dish or you may line it with a parchment paper if you have.
  7. Pour the batter into the loaf dish and bake at 175 degree Celsius for 40 -50 minutes.
  8. Insert a toothpick in the center after 40 minutes. If the toothpick comes out clean you have a well-cooked banana bread. Baking time may vary and may be extended up to 50 to 55 minutes.

Top tips:

  • To keep it moist, remove from the oven, cover it with foil and let it rest on the counter until cold. Do not open and slice at this time. Remember the best things in life take time! Keep the banana bread in the ref for at least 2 hours. Serve cold and enjoy.
  • If you have overripe bananas but no time to bake, peel and pop them in a container and freeze for later. Make sure you thaw them properly before mashing when it’s time to bake.
  • Keep your leftover in an airtight container. It can stay moist for 3 days at room temperature and a week in the ref.
  • Check the banana loaf after 40 minutes as baking time may vary.
  • Elevate the goodness by adding any of the following:
  • Chopped, toasted nuts such as cashew, pecans or walnuts
  • Chocolate chips
  • Dried fruits such as raisins
